BAYLY: Bio

Chef Tommy Antoniacis

In his homeland of Greece, Chef Tommy learned that the love of his life was cooking .
Tommy`s journey in the culinary arts, which started in Greece, soon took him further afield to Hildesheim, Germany, where he expanded upon his knowledge. It was in Germany that he learned about food and wine combinations.

After completing his education, he moved back to his hometown of Thessaloniki where he became Head Chef of the famous Hotel Sere located in Ladadika, Thessaloniki.

In 1987 he received an offer from an authentic Greek restaurant in Toronto`s Greek community and moved to Canada to continue his career in the culinary arts. While there, he worked closely with the renowned Chef Constantine.

Tommy`s dream to open up his own restaurant soon became reality, and five years after coming to Canada he opened the Centennial Restaurant.

Sometime after this, he opened Tommy`s Backyard where Now Magazine successfully reviewed him. Other media outlets also recognized him, including Life Network who produced a biography on him.

Tommy also did a live show for BBC England where he showcased his cooking art with special emphasis on marinades and sauces.

Tommy's career has expanded over the years to include catering. One of his main projects each May is to provide the food for the annual Nurses Association meetings in Toronto.

During the past couple of years, he has been privileged to cook for celebrities including sports stars, TV and film personalities, and the Prime Minister.

Tommy had a passion for cooking in a different setting, and with this in mind he opened the Bayly Restaurant in Ajax, Ontario.

Here the diner will find gourmet homemade cooking in both a casual and comfortable atmosphere. His vegetarian dishes are special and the seafood dishes unique. His long time customers who have followed him during his 15 years in Canada know that they will not be disappointed and are now driving from Toronto and out of town areas such as Penetanguishene, Kitchener, Waterloo, Newmarket, and Barrie to continue their enjoyment of his gourmet art.
